I’ve always believed those who enjoy decaf are the true coffee lovers. It’s always our goal to find exquisite decaf coffees that express clarity and depth of flavor so those who are caffeine-sensitive can still experience the wonder of coffee.
This particular lot was carefully curated for its cup profile and its potential to shine once decaffeinated. During the water process, the green coffee is pre-soaked to expand the beans for caffeine extraction. The hydrated coffee is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while minimizing the loss of flavor compounds. Once the caffeine has been removed, the green coffee is re-dried and re-bagged for transport. The extract solution is then filtered of its caffeine and recycled for reuse.
This coffee is sourced from Café Orgánico Marcala, S.A. (COMSA), a co-op in Marcala, Honduras, whose foundation is rooted in human wellbeing. Through its initiatives, COMSA educates more than 1,500 producer-members to live successfully and harmoniously with nature.
